Vegan Jell-O İDeborah Barr, 1985-2015

4-5 tablespoons agar-agar flakes (also called kanten flakes)

1 teaspoon vanilla or almond extract

4 cups apple juice

 or squeeze of lemon, optional

2 cups fresh fruit

pinch of sea salt

Place juice, agar flakes, and salt in a saucepan. Bring to boiling point, stirring constantly until all flakes are dissolved. Stir in vanilla. Pour over sliced fruit. Use berries, peaches, cherries--any fruit is good.  After mixture stops steaming, refrigerate until jelled. You can pour kanten into a Jell-O mold or any dish. The more shallow the dish the faster it will gel.

NOTE: Agar is a sea vegetable that has no taste. Its purpose is to gel foods. It is very nutritious as well.

You can use any natural fruit juice without added sugar and any fruit of choice.

Agar Flakes – a type of red marine algae known as agarophytes containing a complex starch that is used throughout the world as a vegan gelling agent. It is superior to gelatin in that it doesn’t easily melt, has a firmer texture, and zero calories. Agar is rich in iodine, calcium, iron, phosphorus and vitamins A, B-complex, C, D, and K. Agar soothes the digestive tract and acts as a mild laxative. It has no taste.

Almond Cream Topping (optional)

Blend 1 cup of the jell-o and ½ cup almond butter in the food processor until smooth.

Right before serving put a heaping tbsp. of the almond topping over the kanten. Sprinkle with roasted almond slivers.
