Ingredients

  • 2 1/4 cps.  GF flour
  • 1 cp. oat flour (not oat milk flour)
  • 1/2 lb. organic butter or vegan butter            
  • 2 organic eggs (vegan substitute below)
  • 1 tsp. baking soda
  • 1 tsp. baking powder (non-aluminum)            
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 2 cp. dark chocolate chips
  • 1 cp. date sugar
  • ¼ cp. pure maple syrup

Directions

  1. Cream together the sugar and butter.
  2. Beat in eggs or vegan egg option, maple syrup, and vanilla until fluffy.
  3. In separate bowl, combine the flour, baking soda, baking powder, salt and sugar, mixing well.
  4. Combine wet and dry ingredients, then stir in the chocolate chips.
  5. Bake at 365 degrees for 8-10 minutes.

 

Vegan egg options

  1. 3-4 TB. mashed banana per egg (cookies may be gooey)
  2. 3-4 TB. unsweetened applesauce per egg (may take cookies up to 15 minutes to bake) – many people like this option best
  3. Flax egg – 1 TB. flax meal + 3 TB. water per egg. Flax Meal: grind whole flax seeds in a coffee grinder, spice grinder or food processor until fine. Store in refrigerator.
  4. Egg Replacer –  2 TB. per egg – Bob’s Red Mill makes this – may need to add a little extra liquid to recipe; can use a little vegan milk; 1:1 ratio
