Vegan egg options
- 3-4 TB. mashed banana per egg (cookies may be gooey)
- 3-4 TB. unsweetened applesauce per egg (may take cookies up to 15 minutes to bake) – many people like this option best
- Flax egg – 1 TB. flax meal + 3 TB. water per egg. Flax Meal: grind whole flax seeds in a coffee grinder, spice grinder or food processor until fine. Store in refrigerator.
- Egg Replacer – 2 TB. per egg – Bob’s Red Mill makes this – may need to add a little extra liquid to recipe; can use a little vegan milk; 1:1 ratio
