 Sensuous Sea Salad ©Deborah Barr

supports weight loss, healthy bones, joints, hair and healthy metabolism


Ingredients:

8 oz. whole wheat sesame spirals (or any pasta)
˝ cup dried arame or hijiki
2 cp. lightly steamed green beans or snow peas
6-8 finely chopped scallions
2 cp. carrot sliced thin
1/4 cup chopped parsley
Toasted Sesame Oil
Apple Juice
Mirin (rice cooking wine)

Rinse and soak arame or hijiki in cold water 30 minutes.
• Heat a small amount of sesame oil in a skillet and sauté arame for 3-5 minutes.
• Add carrots and sauté another 3-5 minutes.
• Add a combination of ˝ apple juice and ˝ water along with 1 TB. soy sauce, to almost cover arame.
• Simmer for 20-25 minutes, removing lid for last 5 minutes, cooking until all liquid is absorbed.
• Sprinkle cooked macaroni generously with toasted sesame oil.
• Combine all veggies, macaroni and arame and a combination of 1 cp. apple juice and ˝ cp. mirin.
