Ingredients

4 Pears

1-2 TB. organic raisins or currants

1/2 cup water or apple juice

1/2 tsp. cinnamon

Heaping TB, Arrowroot or Kuzu*

Small pinch of unrefined sea salt

  1. Wash and slice pears. I leave the skins on if they are organic.

  2. Place the pears in a saucepan with water or juice, pinch of sea salt, and raisins or currants.

  3. Bring to boil, turn down heat, add cinnamon, cover and simmer 3-4 minutes.

  4. Dissolve arrowroot or kuzu in small amount of cold water and stir into the mixture.

  5. Bring to a boil again, turn down heat, and simmer 1-2 minutes more, stirring constantly until mixture thickens.

Note:  You can make this compote with a variety of fruits, including berries, even dried fruits such as apricots, apples, prunes, etc.

Pears moisten dryness; benefit the stomach and lungs; treat constipation, dry cough, gallbladder problems; and, in some cases, diabetes.

For many people raw fruit causes gas, bloating, belly fat, yeast, bowel problems and too much coldness.  Cooked fruit is far easier to digest especially when warming spices are added.

Arrowroot – a thickener made from the root of the tropical arrowroot plant.  It is far superior to highly refined cornstarch.

Kuzu is the powdered root of the kudzu plant – valued for two thousand years as a important food and medicine.  It is commonly used as a thickener and is superior to arrowroot and corn starch.  Used to relieve pain, stiff neck and shoulders, digestive disorders, headaches, fever, colds, and hangovers.
